Mini Blackcurrant Vanilla Cups (v, df, gf)

These tasty little morsels are easy to make ahead of time - for an impromptu any-time sweet treat. Ingredients: Cases: ¾ cup raw cashews ½ cup sunflower seeds 1 cup ground almonds 3 medjool dates - pitted ¼ cup hot water ½ tbsp maple syrup Filling: 2-3 tbsp frozen blackcurrants 5 heaped tbsp Raglan Food Co coconut yoghurt - Vanilla Bean  Note: If you eat these straight from the freezer, the texture is a little like ice cream.
