The pear-fect dessert to impress your loved ones…

Ingredients:

  • 1 litre water
  • ¼-½ cup sugar – adjust to personal taste
  • 1 tbsp honey (optional)
  • 2 firm pears – peeled, cored, and quartered
  • ½ cup macadamias
  • 1 generous tsp icing sugar
  • ¼ cup coconut flakes
  • Raglan Food Co coconut yoghurt to serve; Vanilla Bean or Natural-Greek Style

Method:

  1. Preheat your over to 180ºC fan bake.
  2. In a saucepan over a medium heat, bring the water, sugar and honey (if using) to a soft simmer.
  3. When the sugar has dissolved slide in the prepared pears and gently simmer for 10 to 25 minutes, depending on the ripeness of your fruit.
  4. While the pears are poaching, toss together the macadamias, icing sugar and a small splash of water to ensure a light sugar coating over the nuts.
  5. Place them on a lined tray in the preheated oven for 5 to 10 minutes, or until the nuts are roasted and the sugar caramelised.
  6. On a separate tray place the coconut flakes in the oven and watch closely for 1 to 2 minutes until they are lightly toasted. These turn fast so keep an eye on them.
  7. To test the pears gently poke the fruit with a knife. When there’s no resistance and the pears have become translucent and tender, turn off the heat and leave them in the syrup to cool slightly. During this time they will become silkily soft and soaked through with syrup.
  8. Serve the pears warm over a generous helping of Raglan Food Co yoghurt and a sprinkling of nuts and coconut.
  9. Enjoy!
