Sweet semi-soft circle biscuits – perfect for dipping in cacao or coffee.
Ingredients:
- 300g flour
- 100g coconut sugar
- 1 tbsp baking powder
- 1 egg or sub 1 flax egg (3 tbsp ground flaxseed + 3 tbsp water)
- 150g Raglan Food Co coconut yoghurt – Natural Greek-Style
- 1 tsp vanilla extract
- 50g olive oil
- Zest of 1 lemon
- Pinch of salt
To Serve:
- Icing sugar to decorate
Method:
- Preheat oven to 180ºC.
- For the flax egg – mix ground flaxseed and water and let sit for 10 minutes.
- Mix flour, coconut sugar, baking powder and salt.
- Make a well in the dry mixture and add coconut yoghurt, egg/flaxseed egg, vanilla and oil. Grate in lemon zest.
- Combine while not overmixing into a soft dough.
- Divide dough into 14-16 pieces. Roll each piece into a 15cm length, form into a circle and place on a baking tray lined with baking paper.
- Bake for 20-25 minutes.
- Sprinkle with icing sugar and enjoy!
