The yummiest slice made using our limited edition Vegan Caramel Sauce!

Ingredients:

Base:

  • 1 ¼ cup jumbo oats
  • ¾ cup shredded coconut
  • ¼ cup buckwheat
  • ½ cup dates – soaked
  • 2 tbsp coconut oil

Caramel layer:

  • ½ cup dates – soaked
  • ¾ cup Raglan Food Co Vegan Caramel Sauce
  • ½ cup cashews – soaked
  • ½ cup Raglan Food Co coconut yoghurt – Vanilla Bean
  • 1 tbsp coconut oil

Method:

  1. Place the oats, shredded coconut and buckwheat in a blender and blend until it resembles medium sized crumbs.
  2. Add in the dates and coconut oil, continue to blend until well combined and sticking together.
  3. Press roughly two thirds of mixture into the bottom of a lined tin (or unlined silicone version). Set aside the remaining third.
  4. Place all the caramel ingredients into a blender and blend until as smooth as possible, scraping down the sides as you go.
  5. Pour caramel mixture over the base, spreading evenly.
  6. Sprinkle the remaining oat base mix on top and place in the freezer overnight.
  7. Remove from the freezer and slice. Can be kept in freezer for up to 4 months.
  8. Enjoy!
